One Shot Mercat 09 Hotel Review, Valencia, Spain

The stylish on-site restaurant and bar Karak (closed Sundays and Mondays) features excellent innovative global fusion cuisine, although the à la carte menu (available only in the bar area) is very expensive by comparison with the many good eateries within walking distance of the hotel. Its array of small sharing dishes includes the likes of scallop ceviche with aguachile (€20/£18) and tartare of orange-cured duck (€18/£16), followed by desserts such as hazelnut soufflé (€6.50/£6). The good-value 12-course tasting menu (the only option in the restaurant itself) gives you a flavour of the chef’s favourites for €55 (£48). Dishes change seasonally, but may include ravioli of suckling lamb with liquorice, sage and rhubarb. The creative serving vessels, including bespoke bowls, wooden spoons and even leaves, adds to the sense of a one-off experience.

The same space, with its chic but fun décor that includes a giant cut-out of a stag’s head that morphs into a tree, is the setting for breakfast. Items include local hams, boiled eggs, croissants, breads, smoothies and cereals, with many made in-house by Karak’s chef. It’s served on a pre-laid-out tray, though, so you don’t get to choose what you have.
